Apricot, nectarine and honey cake

Ingredients
2 Eggs250ml Milk
125ml Vegetable Oil
100g Granulated Sugar
100g Brown Sugar
3 tbsp Honey
200g Flour (plain)
200g Wholemeal Flour
1 Tsp Salt
4 Tsp Baking Powder
300g Fresh Apricots
150g Fresh Nectarines
Method
- Preheat the oven to 200°C (gas mark 6, 400°F).
- Put the eggs, milk, oil, sugars, and honey in a large mixing bowl and beat together.
- In another bowl place the flours, salt and baking powder and mix thoroughly.
- Chop the apricots and nectarines into small pieces, and stir into the flour. Pour in the liquid, and mix together until just blended.
- Line 2 small loaf tins, and fill with the cake mixture.
- Sprinkle a little brown sugar over the top, before baking for 20-25 minutes.
