Raisin and oat cookies

Ingredients

12 Eggs, beaten
920g Raisins
6tsp Vanilla essence
920g Butter
690g Brown sugar
690g Caster sugar
2.3kg Plain flour
2 tsp salt
4 tsp Baking powder
4 tsp Ground cinnamon
1.84kg Oats

Method

Preheat oven to 170°C.

Combine the eggs, vanilla essence and raisins and stand for 1 hour.

Cream the butter and the sugars.

Add all the dry ingredients and mix.

Add the egg mix then the oats and mix well.

Drop spoonfuls onto baking parchment giving enough space between each cookie when cooking.
