Lamb meatballs with tomato and penne pasta

Ingredients
250g minced lamb2 small onions
1 red pepper
2 cloves garlic
Small tin chopped tomatoes
20g tomato puree
300ml vegetable stock
Pinch paprika
Pinch pepper
Few leaves basil
Small bunch parsley
Dash lea & perrins
300g penne pasta
50g cheddar cheese
Method
For the meatballs; finely dice one onion and the pepper, place into a hot pan with a dash of oil. Fry for a minute and add the garlic then add a pinch of paprika and pepper. Add a little water. Once the water has evaporated leave to cool. Take the lamb mince and mix it into your onion and pepper mix. Mould into balls and place in the oven at 200c for 25mins.Slice the remaining onion and fry in a pan, add the tomato puree chopped tomatoes and vegetable stock ( use a stock cube if you don’t have fresh stock) cook for 15mins then add chopped basil and parsley. Introduce the meatballs and any juices into the tomato sauce and cook for a further 5 mins.
In a separate pan boil the pasta until soft then drain
Pour the meatballs onto the pasta and sprinkle with grated cheese
