Farmhouse fruit cake

Ingredients
2kg Currants2kg Sultanas
25 Eggs
910g Soft brown sugar
910g Unsalted butter
1.8kg Soft flour
4 tbsp Baking powder
¨û pint Sherry (optional)
Method
Cover the dried fruit with boiling water and leave to stand for 2 hours.Cream the butter with the sugar until light and fluffy.
Gradually add half the eggs a little at a time.
Add the flour and baking powder and lightly mix.
Add the remaining eggs and the sherry.
Drain the fruit and add to the cake mixture, mix well.
Divide mixture into 5 Loaf tins, sprinkle with nibbed sugar.
Bake at 150¡ÆC for approx 2 hours.
