Sticky ginger chicken leg (boneless)

Ingredients

400ml Lemon juice
400g Light muscovado sugar
35g Grated ginger
200ml Soy sauce
50 Chicken legs (boneless)

Method

1. Preheat oven to 210oC

2. Mix together the lemon juice, sugar, ginger and soy sauce.

3. Toss the chicken in the glaze, preferably over night to maximise the flavour.

4. Seal the chicken over a grill pan.

5. Cook the chicken in a hot oven 210oC around 20 minutes or until it is hot (above 76oC), occasionally brushing with the glaze.

Great to serve with vegetable chow mein, cous cous, braised rice or tossed salad
