Our signature fruit flapjack

Ingredients
2.2kg Rolled oats2 x 250g Packs of butter or margarine
125g Toasted sunflower seeds
1.8kg Golden syrup
250g Diced dried apricots (You can supplement the fruit with other dried fruits like dried chopped dates, cranberries, raisins, paw paw, mango etc)
300g Sultanas
Method
1. Preheat the oven to 170oC.2. Melt the butter and syrup together until it starts to boil, take off from the heat and leave to cool slightly then stir in the oats, seeds and dried fruit.
3. Line two shallow baking trays with baking parchment and split the mixture between the trays.
4. Lightly press down the mixture and bake in the oven for around 20 minutes.
5. Leave to cool then cut into desired size pieces.
