Mango and carrot crumble cookies

Ingredients
165g Butter210g Dark muscovado sugar
3 Eggs
150g Plain flour
1.5 tsp Bicarbonate of soda
450g Porridge oats
3 Small carrots peeled and grated
165g Dried mango finely chopped
Method
1. Preheat the oven to 190oC.2. Cream together the butter and sugar and add in the egg and beat well.
3. Sift in the flour, bicarbonate of soda and then add the oats, carrot and mango – mix well.
4. Mould into golf ball size balls.
5. Bake on a greased or non-stick sheet for 15-20 minutes.
Cool on a wire rack.
