Lower fat brownie

Ingredients
900g Butter or Margarine900g Caster Sugar
900g Demerara Sugar
568g Low Fat Cocoa Powder
568g Sieved Plain Flour
500g Sultanas
5 Tsp Vanilla Essence
17 Eggs
Method
1. Preheat the oven to 150oC2. Melt the butter then add the sugar to dissolve, take off from the heat and leave to cool slightly.
3. Stir in the cocoa powder then the beaten eggs and vanilla.
4. Fold in the sieved flour and sultanas.
5. Pour into 2 lined shallow gastro trays and cook for 25 to 30 minutes. It should still be gooey in the centre and have a crisp top.
6. Leave at room temperature to set.
