Carrot cake

Ingredients

0.8kg Butter or margarine
0.8kg Soft brown sugar
12 Large eggs
1.35kg Self raising flour
65g Baking powder
6 Oranges, zested and juiced
1kg Grated carrot
3 tsp Vanilla essence
330g Sultanas

Method

1. Preheat the oven to 190oC.

2. Cream the fat and sugar together until light and fluffy.

3. Beat in the eggs and then fold in the flour, baking powder, orange zest and juice, grated carrot, vanilla & sultanas.

4. Spoon into the prepared oven proof dish and bake in a preheated oven for 45-50 minutes.

5. Dust with icing sugar or a orange and icing sugar glaze
